The post-translational modification which is the most abundant in nature is the glycosylation of proteins. This modification affects deeply a protein: it can alter its function, stability, conformation and half-life in serum. The glycosylation of a protein is a complex process involving numerous enzymes: glycosidases and glycosyltransferases. As a result, glycoproteins can have very different patterns of glycosylation, even while using the same cell lines, according to the conditions used. For example, recombinant glycoproteins have gained an important share of the pharmaceutical industry output. The complexity of glycans, their physicochemical properties and involvement in major biological functions make glycomics the next challenge.
